Directions

  • Over medium-high heat, in a large pot, heat veggie oil; sauté onion with hot oil till slightly golden and softened, within five to ten minutes. Add garlic; sauté untill fragrant and golden, two to four minutes more. Stir thyme and sage in the onion mix and sauté till fragrant, within about half a minute.
  • Stir barley, quinoa, kidney beans, water, squash, vegetable broth, and salt into the onion mix; boil the mix, and use medium-low to simmer till the barley is soft and soup flavors combine, within about thirty-five minutes.
  • Stir kale into the soup; simmer till the kale is soft, within about ten minutes.

  • 35 buttery round crackers, crushed
  • 1/2 cup chopped onion

Directions:

  • Preheat oven to 200 degrees C (400 degrees F).
  • Over medium heat, in a large skillet, put onion and squash. Pour in a small amount of water. Cover, and cook till the squash is soft, within about five minutes. Drain well, and put in 1 large bowl.
  • In a medium-sized bowl, mix together cheese and cracker crumbs. Stir half of the cracker mix into the cooked squash and onions. In a small bowl, mix together milk and eggs, and then add to squash mix. Stir in ¼ cup butter (melted), and season with pepper and salt. Spread into a 13×9 inch baking dish. Use the remaining cracker mix to sprinkle, and dot with two tbsps. of butter.
  • Bake in the preheated oven for twenty-five minutes, or till lightly browned.
